| 内容記述 | The prooxidant activities of various chlorophyll derivatives containing in the vegetable oils on the photooxidation of methyl linoleate were examined. Chlorophylls, pheophytins and pyropheophytins showed the prooxidant activities, and the relative activity of each chlorophyll derivative were chlorophylls<pheophytins≒pyropheophytins. In the same kind of chlorophyll derivatives b-type was higher than a-type. The major components of chlorophyll derivatives in commercial olive oils were pheophytins and pyropheophytins, measured by high-performance liquid chromatography. These derivatives played an important role in the decline of oxidative stability of olive oils in the presence of light. | |||||
