内容記述 | Our investigation will be carried out to study the utilization of traditional milk products made by conventional methods in Mongolia. In this report, details of livestock farming in Mongolia and the general composition of Mongolia's main traditional dairy products will be shown. Mongolia is located in the northern part of Central Asia. The term of plant growth is extremely restricted by severe weather conditions, thus agriculture is also restricted. About 75% of the total area in Mongolia is covered with permanent pastures. Grasslands in the central part of the country have traditionally sustained most of the agricultural population. They tend cattle, sheep, goats, horses, and camels. The livestock farming of Mongolia represents a clear example of the classic type of a nomadic animal husbandry developed relying upon the seasonal pasture rotation-use system. The concentration of population in the cities is progressing quickly. Moreover, the decline of the farm population is remarkable. Yet, animal husbandry is still one of the important divisions of the key industries. It is guessed, that livestock farming which was highly adapted for severe natural conditions has been inherited traditionally. There are 20 or more different types of traditional milk products in Mongolia. The general composition of some kinds of Mongolia's main traditional dairy products , namely, EEZGII and AARUULs were analyzed. The moisture content of EEZGII is 7.8g and AARUULs are 13.3-20.3g, and it is harder than Parmesan cheese of an extra hard cheese. These products resemble the dryness of the cheese called CHURPI of Nepal. The protein contents of EEZGII and AARUULs are 35.9g and 41.5-55.6g, respectively. They are considered to be high protein foods. The carbohydrate content and the calcium content of EEZGII is notably high as compared with the calcium content of AARUULs. In addition, much similarity was observed between the manufacturing method of the traditional dairy products in Mongolia, and those of neighboring Asia countries, such as Nepal and Turkey. | |||||
